Fried chicken / KFC @ home
Ingredients:
Chicken 500-600gms
Maida 1/2 cup
Maize flour 1 cup
Corn flour 1/4 cup
Bread crumbs 1/4 cup
Oregano / pizza mix 3-4 tsp
Chilli flakes/ red chilli powder
Salt
Egg 2 no's
Garam masala 1/2 tsp
Directions:
Boil some water and add 2-3 spoons of salt and drop the washed chicken inside and switch off the flame.keep the pot closed for half an hour.Chicken is 50-60% cooked in the hot water,and it has a minimum salt taste in it.
Add red chilli powder, corriander powder,garam masala, turmeric powder,salt
Rub the masalas nicely into the chicken pieces.
If you want to fry the big pieces as it is, split using knife and rub masalas inside the pieces.
Add buttermilk / curd and soak.
Soak it for at least 4-5 hours or overnight for better taste
I soaked it a overnight.
Before frying there are some ingredients to keep it ready.
1. Crack the eggs and keep it aside ready
2.On the other hand add maida, maize flour,corn flour,bread crumbs in the same bowl.
Toast bread slices in oven for 30 seconds each side @ 600'
Toast is ready
Transfer it to the mixture and blend it for a second.

Add red chilli powder / chilli flakes, pizza mix / oregano, salt, garam masala,Jeera powder
Mix well the dry ingredients together
Overnight soaked chicken
3.I'm cutting it to a small slices so that it tastes better and cooks evenly.
Drop the soaked piece to maize mix and coat it thoroughly without leaving any moisture.
Now directly from maize mix take the piece and drop it to egg bowl
Again from egg to maize mix. Do the same procedure 2-3 times so that the chicken will come out crispier.
Finally after 2-3 times of dipping
Squeeze the chicken in maize mix nicely and keep aside
Squeeze nicely so that the moist will get absorbed in maize mix.
Use the same procedure for all chicken pieces and keep aside for a minute.
Heat up oil in a kadai. Pour minimum oil to fry because the oil and kadai will get messy now🤣
Drop the chicken pieces and fry in a high flame for a minute then switch it to medium flame
Flip over the pieces
Once when the chicken reduce bubbling keep on flipping it so that it cooks evenly
Take out the chicken once you get the exact colour and cooked from inside
Fried chicken pieces are ready😀 Serve it with tomato sauce.
Note:
1.when you squeeze the chicken don't bother about the shape..check out my cut pieces shape and final fried shape..
2. If you skip squeezing, chicken will be moist inside and once you drop it in hot oil it will get crackled.
