Veg Kothu Parota
Ingredients:
Maida Parota ( store bought)-4pcs
Onion 2 large
Tomato 1 medium
Capsicum 1 large
Peas 50gms
Soy sauce
Tomato sauce
Vinegar
Maggi magic masala( secret ingredient)
Oil
Directions:
Chop onion,tomato and capsicum into large piecesRoll the Parota and cut long pieces π
Take a heavy bottom pan and heat up then pour some oil
On the other side heat up another pan and pour oil
In a heavy bottom pan add 2 spoonful Jeera powder
Once Jeera powder colour changes add Parota pieces and stir well in a high flame
Then spread the Parota pieces in a kadai and leave it in a medium flame for 5 mins
Meanwhile on otherside, add Jeera and curry leaves
Add turmeric powder,kashmiri Mirch powder,garam masala and saute
Add onions and saute well
Once its sauted well add ginger garlic paste and sauteπ
Once the raw smell disappeared add peas, tomato and capsicum π
Add salt and saute well. Then close the pan with lid so that vegetables can cook faster
Meanwhile on the other side, give a stir. One side of Parotas are little crispy.every 5 mins give a stir.
After 10 mins Parotas are crispy
Now it's time to add our secret ingredient magic masala, add half pack magic masala in Parota kadai and mix well
Sprinkle some more oil and stir to get more crispier
Vegetables are half cooked now remaining magic masala is here and mix well
Parotas are crispy enough
Transfer the vegetables to Parota kadai and mix well and add 2 spoonful soy sauce, tomato sauce and vinegar and mix well.And switch off the flame and remain closed for 10 more mins.
Sprinkle some corriander leaves and serve.Kothu Parota is ready ππ
Note:
1. If you would like to do with non-veg,add boiled chicken pieces along with vegetables.
2. While adding sauces add 4-5 spoonful of chicken gravy or lamb gravy and mix well.
3. For egg Kothu Parota, In a separate kadai heat up oil,add pepper powder one pinch and salt give a nice mix and add eggs and fry it. You will get a scrambled egg add that to Parota kadai before adding sauces.
