How to make soft pulka


Ingredients:

Wheat flour / atta 
Salt 
Water 

Directions:

Take a wide mouth bowl add atta and salt. Mix well
Add some water and mix well by using your hands
The dough is ready now it's very dry so sprinkle some drops of water on top and keep aside for 5 mins.
After 5 mins press the dough nicely, if couldn't do so hit the dough nicely.
Take some portion of dough and make it into medium size balls.
Take some raw atta flour for greasing
Heat up a pan which you will not use for dosa
Grease a dough before rolling
After greasing roll it to a maximum size of your stove grill
The size of your pulka should not come out of your stove grill
Transfer it to the tawa, in medium flame
Once you see the small bubbles like this⬆️ flip over
Allow it to cook for 30 seconds
Once it start raising like this⬆️ take the pulka using papad Ka spatula and place it on the grill
Place it on the grill upside down
It will start raising immediately after placing directly on the grill, even if it's not raising also don't wait for it 
Switch it to next side and immediately take out from the grill.
Same way do it for soft pulkas.
Pulkas are ready.. you can grease butter / ghee on top of it before serving.

Note:

  • If your dough is very thick even after pressing nicely then roll a thin pulka to make it soft.
  • If your dough is watery add atta and adjust the consistency or make a thick pulka.
  • You can add a spoonful of curd also along with salt for better taste.
  • Before serving keep it in hot case so that it will remain soft.. don't forget to keep a kitchen tissue under each pulka so that it will not get moist inside hot case.
