Vegetable pulao recipe
Veg pulao recipe
Ingredients:
- Onion 1 large
- Cauliflower 3-4 flowerets
- Peas 20-30gms
- Beans 10-15 pcs
- Carrot 2-3 no's
- Bay leaves
- Cinnamon stick 1 inch
- Cloves
- Coconut pieces small 10
- Corriander leaves 1/2 bunch
- Green chillies 5-6 no's
- Basmati rice 1 large cup
Directions:
Heat up a wide mouth pot or pressure cooker for making pulao. (I'm using idly base pot.) Pour some oil and ghee 50% each and add cinnamon stick,cloves, bay leaves and sauteAdd onions and saute in high flame
Add pulao vegetables and saute
Meanwhile grind pulao masala. Take a mixture and add coconut pieces, corriander leaves,kaskas,green chillies and grind to a smooth paste.

Add the masala paste and saute
Add turmeric powder
Add a cup of water to cook vegetables
Add fresh cream / curd.
Close the pot using tight lid so that the vegetables will cook faster
On the other side take another pot and heat up with oil
I forgot to add ginger garlic paste along with vegetables so I'm adding it now.fry the paste nicely
And take out the cooked ginger garlic paste separately
And add the paste along with cooking vegetables and close the pot again
Now in the second pot add the basmati rice and fry for 5-7 mins
Fry rice in a medium flame
Fry untill you get a nice smell of basmati rice then switch off the flame
On the other side vegetables cooked 50%
Add the fried rice in the vegetables pot and mix well
Mix well and saute for a minute in high flame
Add 2 1/2 cup of water for one cup of rice.Use the same cup for measurements
Close the pot and keep it in high flame for 5 minutes..and keep it in simmer for 15 minutes untill you get the nice aroma of pulao.once you get strong smell swtich off the flame and remain closed for 5 more minutes..
Above the lid place some weight on top of it so that the pressure keeps inside and it cooks faster
After sometime open the lid..all your vegetables will be in the first layer..without breaking mix carefully
Mix it using dosa spatula.
Pulao is ready π Serve it with raita of your choice.
Add curd, hing and salt
Raita Recipe:
Chop tomatoes and carrots finely. I have used vegetable cutter for finely chopping you can also grate the carrots.Add curd, hing and salt
Adjust the consistency by adding more curd and check the taste.. garnish some corriander leaves.
