Vendaikkai pachadi - Chettinad special


Ingredients:

  • Ladies finger / vendaikai250gms
  • Small onion / Chinna vengayam10nos
  • Country tomato / Natu thakkali 1large
  • Tamarind lemon size / Puli 
  • Rock salt / kal uppu 1 spoonful
  • Toor dal / tuvaram parupu 2 cups

Directions:

I took ladies finger 250gms, small onion 10 nos and a country tomato
We Chettinad people generally use small onions more than the regular onion..Even in my blog you can find more recipes using small onion..It will give you an extraordinary taste..
And one more important thing..  chop the ladies finger into a thin slices like ⬆️. If  you cut this into thick pieces then it will be like a Sambar but not pachadi
Take a tamarind lemon sized and soak it with a cup of water along with a spoon of rock salt
Heat up the kadai and add groundnut oil ( if not available you can use oil of your choice)
Once the oil is heated up add mustard seeds, urad dal 1 spoon, methi seeds 1/4 tsp and curry leaves
Add small onion and saute for a minute in high flame
The onion will become double the size and now simmer the stove
Add ladies finger slices and saute well, it will leave gel once you start sauting
Saute in a medium flame till the gel gets disappeared
Add tomatoes and saute
Tomatoes will become mashy
Now add turmeric Powder and sambar powder and saute well
Once the masalas are cooked well
Squeeze the tamarind nicely and filter the tamarind water..
Keep aside the squeezed tamarind finally when we tastes the pachadi if there is a need to adjust sour taste we will use the same tamarind
Add the filtered tamarind water
Close the kadai with lid for 5 minutes,let the vegetables cook along with tamarind
Once you open the lid it will be like a semi gravy
And the onions and ladies finger cooked almost 80%
Take around 2 cups of toor dal
Pressure cook the toor dal for 2-3 whistles
Add dal to the semi gravy, don't mash the dal before adding
Mix well together and allow it to boil for 5 more minutes, check the taste before leaving it to boil,add Tamarind,sambar powder or salt if needed

Finally vendaikkai/ ladies finger pachadi is ready 😊
