       Adai Dosai/ Chilla recipe


Ingrediants:

Channa Dal/ kadalai parupu 3/4cup
Toor Dal/ thuvaram parupu 1/4 cup
Idly rice/ boiled rice/ pulungal arisi 2 cups
Saunf /sombu 1 spoon
Red chilli / milagai 5 pcs( adjust to your taste)
Small onion/chinna vengayam 10 no's
Drumstick leaves / murungai keerai 1handfull (or) curry leaves.

Directions:

 2 cups rice, 3/4 cup of channa Dal and add toor Dal in the same bowl ⬆️. Soak for 4-5 hours
 Once the rice and Dal are soaked well grind channa dal in a mixer by adding saunf and red chillies.Grind rice separately.
Mix the rice batter with Dal,saunf & chillies batter and also add salt and Turmeric powder.
 Finely Chop the small onions and take some drumstick leaves or curry leaves (if you are using curry leaves chop it finely)
 Take a separate kadai and pour some oil, add little bit mustard seeds.
Once mustard is cracked add onions and saute for a minute
 Add drumstick leaves or curry leaves after sauted onions and add little salt for onion and leaves
 Now switch off the flame and transfer the same onto chilla batter
 Mix well without any lumps and check the salt and chilli taste and adjust the same if needed...
 Heat up the iron tawa and make it like utappam.. And don't forget to make a hole in the centre so that it cooks evenly
 Now flip the dosa and pour oil in the centre and sides..After a minute or two you can take it out

Note:
1. If you want to add more spicy you can use red chilli powder, if you use Kashmiri Mirch powder your adai will get nice colour also.
2.I made my adai like utappam because my kid likes soft adai.. If you want the adai to be crispier the batter should be watery and make like a thin dosa.
3.Making hole in the center is important so that it cooks evenly. We just directly grinded the soaked dal so it takes 2 times time to cook each side in a medium flame.
4.If you like to add on some taste you can add ginger,garlic,cloves while grinding then your Adai will tastes awesome.. But for kids please follow simple recipe.
